I just bought my first piece of Le Creuset. A 5.5 quart flame orange french oven and while googling it I learned all about no-knead bread.
“It involves flour, salt, yeast and water then, without any more than mixing it together, letting it rise for 18 hours or more and baking it in a covered pot. The action of the yeast develops the glutens for you. The method produces bread with an chewy structure and a crisp hearty crust.”
We’ve been kneading our bread in the machine then baking in the oven but we’re always up for something new. More photos of No-Knead Bread on Flickr.
