I just finished watching the video clips from Food and Wine’s Best New Chef’s for 2007 and this one from Chef Matthew Dillon from Sitka & Spruce in Seatle really stuck out. I love the fact there’s no menu and they spend the day preparing simply what they might want to eat that particular day. This place is on the list next time we’re in Seatle.
