I just finished watching the video clips from Food and Wine’s Best New Chef’s for 2007 and this one from Chef Matthew Dillon from Sitka & Spruce in Seatle really stuck out. I love the fact there’s no menu and they spend the day preparing simply what they might want to eat that particular day.
